My current favorite kale salad from the fantastic cookbook “Nourishing Meals” by Alissa Segersten. Kale happens to be a source of calcium: 1 cup of raw kale contains 10% of your daily calcium!
1 bunch kale, rinsed
1/2 green apple, diced
1 cup walnuts, roasted if desired
1/2 green apple
6 Tbsp. extra virgin olive oil
4 Tbsp. apple cider vinegar
1 clove garlic
1/2 tsp. sea salt
Remove the thick stem from the middle of each kale leaf. Tear leaves into bite-sized pieces.
Toss kale in a medium sized bowl with diced apple.
Place all ingredients for dressing into a blender and blend until smooth. Pour dressing over kale and apples. Sprinkle walnuts on salad. Toss together. Serve.
