Day 4 of the Five Day Veggie Challenge:  Leeks!

Hello Everyone,

🧅 Day 4: Leeks

🍂 Meet Your Veggie

Leeks are part of the same vegetable family as onions and garlic, but they have a much more delicate and mellow flavor.

Today’s adventure: discover how slowly cooking leeks transforms them into something soft, sweet, and wonderfully savory.

Kitchen tip: Leeks often hold dirt between their layers. After slicing, place them in a bowl of cool water, separate the layers, and rinse well. Drain before cooking.

🌱 Why Explore Leeks?

Leeks provide prebiotic fiber, vitamin K, vitamin C, folate, and manganese, along with naturally occurring plant compounds found in the allium family. Their mild flavor makes them an easy way to add another vegetable to soups, eggs, roasted dishes, and grain bowls.

Leeks have such a delicious, subtle flavor and are one of my favorite dietary sources of prebiotic fiber (a special type of fiber that feeds that beneficial bacteria in our gut).
It’s hard not to like a warming potato leek soup!

I look forward to seeing you soon,
