Hello Everyone,
Autumn is the perfect season for a little veggie adventure! Next week, I’m inviting you to step outside your usual vegetable routine and explore five delicious, colorful vegetables that you may not eat very often—or perhaps one you’ve decided you simply “don’t like.” It’s also a way to counteract the effect of the Halloween candy and other treats that are making their way into your house at this time of year.
This isn’t about eating perfectly or forcing yourself to love every vegetable. It’s about curiosity, experimentation, and discovering new possibilities. Sometimes a vegetable we think we dislike simply hasn’t been prepared in a way that appeals to us yet.
Each day, we’ll meet a new autumn veggie, learn a little about what makes it special, and try one or two simple recipes. All of the recipes are gluten-free and dairy-free.
We’ll be eating kale, brussels sprouts, winter squash, leeks and beets next week so make sure to include those on your grocery list this weekend. The recipes will start Monday!
I look forward to hearing your feedback next week,
Abigail
