Artichoke Pilaf

I am featuring artichokes in a recipe for the second time in 3 weeks because they are a nutritional powerhouse!  In addition to being high in fiber and antioxidants, artichokes protect the liver from damage and help regenerate damaged liver cells. They stimulate the production of bile which helps move harmful compounds out of the body. 

Artichoke Pilaf
Ingredients 
340 g jar of marinated artichoke hearts, drained and roughly chopped 
1 cup uncooked brown rice 
1 Tbsp. extra virgin olive oil 
1 cup filtered water 
1 cup chicken broth 
1 cup green beans, ends trimmed 
1/4 cup flat leaf parsley, chopped 
1/2 cup toasted pine nuts 

Instructions 
Rinse rice very well under running water. 
In a large pan (with a lid) saute rice in olive oil over low heat for a few minutes. 
Pour water and chicken broth over rice, bring to a boil, cover and reduce heat to low and cook until rice is almost done, 35-40 minutes. 
Add green beans and continue cooking another 5-10 minutes until rice and beans are cooked.  Fluff with a fork, stir in artichokes and parsley and sprinkle with pine nuts.
